An exotic slow-cooked Pork dish for Eclipse. 

Ingredients:

1 leg or shoulder of pork approx 2 to 3kg

100g of castor sugar

50g of brown sugar 

50g of salt

1/8 of a cup of Chinese five-spice powder

Sliced fresh ginger and garlic

Method:

Begin the day before the meal is to be served.

To prepare the pork, combine the sugars, salt and five-spice in a bowl.

Generously rub the pork all over with the sugar mixture, including under the skin, then cover and refrigerate overnight. 

To cook, preheat oven to 150 degrees Celsius, drain the pork and place in an oven dish on slices of garlic and ginger (slices of orange may also be added).

Cook in the slow oven for 6 hours, basting after 2 hours and then every hour thereafter.

The meat can be pulled apart at the table. Serve with fried rice and steamed green beans or bok choy drizzled with Kecap Manis, it pairs very nicely with a class of Noon Eclipse.
